The MIYABI Black collection 9.5" (240 mm) scalloped edge bread knife offers the best of both worlds - featuring a Micro Carbide MC66 powdered steel core wrapped by 132 layers of steel honed to a damask-style wave pattern. MIYABI’s innovative, ice-hardening process locks in the long-lasting sharpness of the CRYODUR® vacuum tempering to achieve an exceptional Rockwell hardness of 66° and the Honbazuke sharpening process to ensure a razor-sharp edge. The new D-shaped handle is made from the beautifully detailed Maple Micarta and embellished with a decorative end-cap and signature mosaic pin for style and comfort. Handcrafted in Seki, Japan.
